Zucchini Casserole

Recipe from the kitchen of Louise McLean.
- 1 package stove top stuffing mix
- 3 medium zucchini
- 1 can cream of chicken soup
- 1 cup light sour cream
- 1 cup shredded carrots
- 1/4 cup chopped onion
Directions:
- Cook zucchini 5 minutes.
- Prepare dressing according to package instructions. Put 1/2 dressing on casserole.
- Mix other ingredients. Pour over zucchini in casserole then cover with the rest of the stuffing.
- Bake 1/2 hour at 350 degrees.
