Zucchini Casserole

Ingredients:

• 1 package stove top stuffing mix
• 3 medium zucchini
• 1 can cream of chicken soup
• 1 cup light sour cream
• 1 cup shredded carrots
• 1/4 cup chopped onion

Directions:

1. Cook zucchini 5 minutes. 
2. Prepare dressing according to package instructions. Put 1/2 dressing on casserole. 
3. Mix other ingredients. Pour over zucchini in casserole then cover with the rest of the stuffing. 
4. Bake 1/2 hour at 350 degrees.
