Honey Roasted Carrots
- 3 large carrots
- Extra Virgin Olive Oil
- Salt & Pepper
- Preheat oven to 425 degrees.
- Wash and dry carrots. Trim, peel and cut carrots on a diagonal into 1/2-inch-thick pieces.
- Toss carrots on a baking sheet with a drizzle of oil; season with salt and pepper.
- Roast for 20-25 minutes or until browned and tender.
- Drizzle roasted carrots with honey; toss on sheet to coat (tongs work best for this).
