Honey Roasted Carrots


  • 3 large carrots
  • Extra Virgin Olive Oil
  • Salt & Pepper
  • Honey


  1. Preheat oven to 425 degrees. 
  2. Wash and dry carrots. Trim, peel and cut carrots on a diagonal into 1/2-inch-thick pieces. 
  3. Toss carrots on a baking sheet with a drizzle of oil; season with salt and pepper. 
  4. Roast for 20-25 minutes or until browned and tender. 
  5. Drizzle roasted carrots with honey; toss on sheet to coat (tongs work best for this).
