Flambe of Pears


  • Fresh pears, peeled and cored (can use canned pears when off season)
  • Brown Sugar
  • Vanilla
  • Butter
  • Pear Brandy
  • Vanilla Bean Gelato
  • Belgium Sugar Waffles, Toasted
  • 1/2 lemon
  • Pinch of salt
  • Whipped Cream
  • Cinnamon


  1. Melt butter in skillet. Saute pears topped with brown sugar. 
  2. Add a splash of vanilla, pinch of salt, and squeezed lemon. Let heat until liquid starts to become a caramel consistency. 
  3. Add 1 ounce pear brandy and light with a torch lighter. Let flame die down. 
  4. Cut Belgium sugar waffles into long strips, add to cup. Scoop in gelato. Top with cooked pears, cinnamon and whipped cream. Enjoy!
