Asian Lettuce Wraps

Ingredients:
  • 1 pound ground pork
  • 1 package mushrooms, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • dash of sugar
  • 1 teaspoon cornstarch
  • fresh garlic and/or ginger
  • 2-3 cups cooked white rice
  • big lettuce leaves
  • green onions/scallions


Directions:
  1. Heat a big skillet over medium-high heat, add a swirl of vegetable il, dump in the pork, sprinkle over a couple pinches of salt and black pepper, and brown the pork. Once cooked, dump the meat on a plate covered with a couple of paper towels to drain the fat, but leave the hot pan as is.
  2. Add the mushrooms to the pan (you might need a little extra oil). Once they're done, add a little salt, and dump in the cooked pork.
  3. To make the sauce, mix the soy sauce, water, sugar,  and cornstarch. If you have them, add freshly chopped ginger and/or garlic. Stir the sauce into the mushroom meat mixture, and let the sauce bubble.
  4. To serve, pile the filling, rice, and lettuce on big plates and put them in the middle of the table. Add a plate of chopped green onions as well. To assemble the wraps, put some rice into a lettuce leaf, filling next, and then any extra flavors you like. Everything stays together the best in that order.
