Traditional Sweet Potato Casserole


  • 2-1/2 pounds sweet potatoes, peeled and cut into 1 inch cubes 
  • 3/4 cup packed brown sugar 
  • 1/4 cup butter, softened 
  • 1-1/2 teaspoons salt 
  • 1/2 teaspoon vanilla 
  • 1/4 cup finely chopped pecans 


  1. Preheat the oven to 375 or 350 if your pan is clear glass.  
  2. Place the sweet potatoes in a large saucepan or Dutch oven and cover with cold water.  bring to a boil.  Reduce heat, and simmer for 15 minutes or until very tender.  Drain and cool slightly. 
  3. Place the potatoes in a large bowl.  Add everything but the pecans.  Mash with a potato masher.  Put the potato mixture in to a greased 11 x 7 inch baking pan.  
  4. Sprinkle the pecans on the top.  Bake for 25 minutes.
