Delicious Curried Pumpkin Soup
Ingredients:
- 2-1/2 cups sliced mushrooms
- 1/2 cup diced onions
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon garam masala
- 3 cups vegetable broth
- 1 15-ounce can pumpkin puree
- 1 12-ounce can coconut milk
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground nutmeg
Directions:
- In a large pot, melt the butter and sauté the mushrooms and onions until tender.
- Add the flour and garam masala and stir until well blended. Gradually add the vegetable broth. Bring to a boil and stir for 2 minutes or until thickened.
- Reduce heat to a simmer. Add the milk, pumpkin puree, honey, salt, pepper, and nutmeg, and continue stirring until thoroughly heated.
