Delicious Curried Pumpkin Soup


  • 2-1/2 cups sliced mushrooms
  • 1/2 cup diced onions
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon garam masala
  • 3 cups vegetable broth
  • 1 15-ounce can pumpkin puree
  • 1 12-ounce can coconut milk
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground nutmeg


  1. In a large pot, melt the butter and sauté the mushrooms and onions until tender. 
  2. Add the flour and garam masala and stir until well blended. Gradually add the vegetable broth. Bring to a boil and stir for 2 minutes or until thickened. 
  3. Reduce heat to a simmer. Add the milk, pumpkin puree, honey, salt, pepper, and nutmeg, and continue stirring until thoroughly heated.
