Green Rice Bake


Ingredients:
  • 3 cups cooked rice
  • 2 eggs, beaten
  • 1 cup milk
  • 3/4 cup chopped fresh dried parsley
  • 4 oz. can chopped green chilies
  • 2 cups cheddar cheese, grated
  • 1/2 cup butter, melted
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1 small onion, finely chopped

Directions:

  1. Combine all ingredients and pour into a 9″x13″ baking dish. 
  2. Cover and bake at 350 degrees for 30 minutes. Uncover and bake for 10 minutes longer. 
  3. Serves 8-10. Freezable.
