Hawaiian-Style Loco Moco
Ingredients:
- 1 onion
- 1 bunch scallions
- 1 cup Jasmine rice
- 1 teaspoon sugar
- 2/3 pound ground beef
- 2 teaspoons beef stock concentrate
- 2 teaspoons Worcestershire sauce
- 2 teaspoons soy sauce
- 1 tablespoon BBQ sauce
- 1 teaspoon garlic powder
- 2 teaspoons cornstarch
- 1 tablespoon ketchup
- 1 tablespoon butter
- Salt & Pepper
- Cooking Oil
- Sesame Seeds
- 2 eggs
- Wash and dry produce. Halve, peel, and thinly slice onion. Trim and thinly slice scallions, separating whites from greens.
- In a small pot, combine rice, 1-1/4 cups water, and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until tender, 15-20 minutes. Keep covered off heat until ready to serve.
- Meanwhile, heat a drizzle of oil in a large pan over medium heat. add onion, a pinch of salt and pepper. Cook, stirring occasionally, until softened and lightly browned, 8-10 minutes. Add 1/4 cup water and 1 teaspoon sugar. Cook, stirring frequently, until caramelized and jammy, 2-3 minutes more. Turn off heat; transfer to a small bowl. Wash out pan.
- Combine beef, scallion whites, salt and pepper in a medium bowl. Gently form into two 1/2-inch-thick patties. Heat a drizzle of oil in a pan used for onion over medium-high heat. Add patties and cook to desired doneness, 3-5 minutes per side. Turn off heat; transfer to a plate. Wipe out pan.
- In a medium bowl, combine stock concentrate, Worcestershire sauce, soy sauce, BBQ sauce, garlic powder, cornstarch, 3/4 cup water, and 1 tablespoon ketchup. Add gravy mixture to pan used for patties over medium heat. Cook, whisking, until gravy is slightly thickened, 30-60 seconds. Turn off heat. Stir in butter until melted.
- Heat a drizzle of oil in a second large pan over medium heat. Once hot, crack eggs into pan and cover. Fry eggs to preference. Season with salt and pepper. Divide rice between bowls. Top rice with patties and caramelized onion. Pour gravy over the top; top with fried eggs. Garnish with sesame seeds and scallion greens.
