Cinnamon Rolls
Roll Ingredients:
- 1-1/2 teaspoons yeast, plus 1/8 teaspoon
- 1/4 cup warm water
- 3/4 cup milk
- 1/4 cup sugar
- 1/4 cup shortening
- 1 teaspoon salt
- 1 egg
- 3 cups plus 3 tablespoons bread flour
Filling Ingredients:
- 1/4 cup soft butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
Glaze Ingredients:
- 1-1/2 cups powdered sugar
- 3 tablespoons ilk
- 1/4 teaspoon vanilla
- dash salt
Directions:
- Dissolve yeast in warm water and let stand for 5 minutes.
- Heat milk and add salt, sugar and shortening and stir until fully dissolved and melted. Add slightly beaten egg to cooled mixture.
- Combine yeast and milk mixtures in a large bowl and beat in 1 cup flour until well blended. Gradually add remaining flour until you have a soft dough that can be easily handled.
- Turn out on a floured surface and knead for about 5 minutes. Place in a greased bowl and turn to grease top. Cover, let rise for 1 to 1-1/2 hours until doubled. Punch down; let rise again 30 minutes.
- Roll out on floured surface 10"x20" rectangle.
- Spread dough with soft butter. Then sprinkle evenly with white and brown sugar mixed with cinnamon. Roll up from long side; cut into 12 rolls. Let rise again 30-40 minutes. Bake at 375 degrees for 17-18 minutes in a 9"x13" pan.
- Mix powdered sugar with milk, vanilla and salt. Provides about 1 tablespoon glaze for each roll. Glaze rolls when still warm but not too hot.
