Cinnamon Rolls

 Roll Ingredients:

  • 1-1/2 teaspoons yeast, plus 1/8 teaspoon
  • 1/4 cup warm water
  • 3/4 cup milk
  • 1/4 cup sugar
  • 1/4 cup shortening
  • 1 teaspoon salt
  • 1 egg
  • 3 cups plus 3 tablespoons bread flour

Filling Ingredients:

  • 1/4 cup soft butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon

Glaze Ingredients:

  • 1-1/2 cups powdered sugar
  • 3 tablespoons ilk
  • 1/4 teaspoon vanilla
  • dash salt

Directions:

  1. Dissolve yeast in warm water and let stand for 5 minutes.
  2. Heat milk and add salt, sugar and shortening and stir until fully dissolved and melted. Add slightly beaten egg to cooled mixture.
  3. Combine yeast and milk mixtures in a large bowl and beat in 1 cup flour until well blended. Gradually add remaining flour until you have a soft dough that can be easily handled.
  4. Turn out on a floured surface and knead for about 5 minutes. Place in a greased bowl and turn to grease top. Cover, let rise for 1 to 1-1/2 hours until doubled. Punch down; let rise again 30 minutes.
  5. Roll out on floured surface 10"x20" rectangle.
  6. Spread dough with soft butter. Then sprinkle evenly with white and brown sugar mixed with cinnamon. Roll up from long side; cut into 12 rolls. Let rise again 30-40 minutes. Bake at 375 degrees for 17-18 minutes in a 9"x13" pan.
  7. Mix powdered sugar with milk, vanilla and salt. Provides about 1 tablespoon glaze for each roll. Glaze rolls when still warm but not too hot.
