Sausage and Potatoes

  • 4 large potatoes ( I usually just use russet potatoes)
  • 2 pounds smoked sausage, sliced
  • 1/2 - 1 cup chopped onion
  • 2 tablespoons vegetable oil

  1. Heat oil in a large skillet over medium heat.  Slice or cube potatoes (It's totally your choice. This is a free potato country.)  
  2. Put the potatoes in the skillet, cover and simmer, but turn frequently to get them brown on all sides.  This should take about ten minutes.  
  3. Add in the sausage and onions and cook for about five more minutes.  Salt and pepper to taste.
  4. Serve for dinner and decide that there is never any reason to eat anything but sausage and potatoes for the rest of your life.  Also, cook the leftovers with some eggs for breakfast the next morning.  Please and thank you.
