Manicotti

Recipe from the kitchen of Anne Terrell.
- 1 box jumbo pasta shells
- 1 container Ricotta cheese
- 1 (8 oz.) bag shredded Mozzarella cheese
- 1 cup Parmesan cheese, divided
- 2 teaspoons parsley
- 1 egg
- 1 large jar spaghetti sauce
Directions:
- Cook the pasta according to the instructions on the box.
- Put the next 5 ingredients (only 1/2 cup Parmesan cheese) into a mixing bowl and blend.
- After the pasta is cooked and rinsed off with cold water (so you don't burn your hands while stuffing), use a spoon and fill the pasta shells. Place the stuffed shells into a shallow baking dish.
- Cover with the spaghetti sauce and sprinkle with remaining 1/2 cup Parmesan cheese. Cover with foil and cook at 350 degrees for 45 minutes.
