Carrot-Pineapple Muffins
Ingredients:
Directions:
- 1 cup vegetable oil
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1-1/2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups peeled, shredded carrots
- 1 cup shredded coconut
- 1 cup chopped nuts
- 1 cup crushed pineapple
Directions:
- Preheat oven to 350 degrees.
- Mix and blend oil, sugar, eggs, and vanilla.
- Sift dry ingredients and add to the first mixture.
- Blend in carrots, coconut, nuts and pineapple.
- Treat pan with nonstick spray. Bake 20-25 minutes. Makes 2 dozen muffins.
