Carrot-Pineapple Muffins

Ingredients:

  • 1 cup vegetable oil
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1-1/2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups peeled, shredded carrots
  • 1 cup shredded coconut
  • 1 cup chopped nuts
  • 1 cup crushed pineapple


Directions:

  1. Preheat oven to 350 degrees. 
  2. Mix and blend oil, sugar, eggs, and vanilla.
  3. Sift dry ingredients and add to the first mixture.
  4. Blend in carrots, coconut, nuts and pineapple.
  5. Treat pan with nonstick spray. Bake 20-25 minutes. Makes 2 dozen muffins.
