Mediterranean Meatball Bowls

 Ingredients:

  • 3 carrots
  • 1 lemon
  • 1 mini cucumber
  • 1 roma tomato
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon beef stock concentrate
  • 1/4 cup panko breadcrumbs
  • 8 ounces ground beef
  • 1 cup white rice
  • 1 tablespoon chicken concentrate
  • 1 tablespoon sour cream

Directions:

  1. Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. Trim, peel, and cut carrots on a diagonal into 1/2-inch thick pieces.  Zest and quarter lemon. Trim and halve cucumber lengthwise. Thinly slice half the cucumber into half-moons; grate remaining cucumber on the largest holes of a box grater over a small bowl. Dice tomato into 1/2-inch pieces.
  2. Toss carrots on one side of a baking sheet with a drizzle of oil, salt, and pepper. Roast on middle rack for 15 minutes. In a small pot, combine rice, chicken stock concentrate, 1-1/4 cups water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-20 minutes. Keep covered off heat until ready to serve.
  3. Meanwhile, in a large bowl, combine oregano, garlic powder, beef stock concentrate, panko, 2 tablespoons water, 3/4 teaspoon salt and a pinch of pepper. Add beef; mix to combine. Form into 10-12 1-1/2 inch meatballs. Once carrots have roasted 15 minutes, remove sheet from oven. Carefully add meatballs to opposite side of sheet. Return to middle rack; roast until meatballs are cooked through and carrots are browned and tender, 12-15 minutes more.
  4. Add sour cream and a big squeeze of lemon juice to bowl with grated cucumber. Season with salt and pepper; stir to combine. In a second small bowl, toss sliced cucumber, tomato, a drizzle of olive oil, a big squeeze of lemon juice, a pinch of lemon zest, and a pinch of salt and pepper.
  5. Fluff rice with a fork. Add carrots and stir to combine. Taste and season with salt if desired. Divide rice and salad between bowls. Top rice with meatballs. Spoon sauce over meatballs and drizzle with hot sauce if desired.
