Southwest Lasagna


  • 2 cups, uncooked brown rice
  • 2 cups sour cream
  • 1-1/4 cups salsa
  • 1 pound lean ground beef
  • 1 package taco seasoning
  • 3 cups shredded cheddar cheese, divided
  • 1 cup crushed tortilla chips


  1. Prepare rice according to package directions.
  2. Brown ground beef in a medium skillet, drain if necessary. Add taco seasoning per package instructions.
  3. In a medium bowl combine sour cream and salsa; set aside. Coat a 9x13 baking dish with cooking spray.
  4. Place 3 cups of the rice in pan; top with half the sour cream mixture. Layer the seasoned ground beef on top, then 1-1/2 cups cheese.
  5. Add remaining rice then sour cream mixture; cover with foil. Bake in preheated 350 degree oven for 15 minutes. remove foil. Sprinkle with remaining cheese and crushed chips. Return to oven and bake an additional 5 minutes or until cheese melts.
