Baja Shrimp Tacos
- 10 ounces Shrimp
- 6 small flour tortillas
- 2 tablespoons flour
- 1 tablespoon olive oil
- 2 tablespoons mayonnaise
- Sriracha to taste
- Rinse shrimp under cold water, then pat dry with paper towels. Add shrimp to a large bowl and season with a big pinch of salt and pepper. Add 2 tablespoons flour; toss to coat. Heat a thin layer of oil (1/4 cup) in a large pan over medium-high heat. Once hot, add coated shrimp in a single layer. Cook until golden brown and cooked through (2-3 minutes on first side and 1-2 minutes on second side). Using a slotted spoon, transfer to a paper-towel- lined plate, immediately season with salt.
- In a second large bowl, whisk together mayonnaise, 1/2 teaspoon sugar, and Sriracha to taste. Add shrimp to bowl; stir to coat.
- Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.
- Serve with salsa, shredded lettuce, shredded cheese, sour cream.
