Honey Roasted Carrots
Ingredients:
- 1 pound carrots
- 1 tablespoon honey
- 1 tablespoon avocado oil
- 1 tablespoon chopped fresh dill (1-1/2 teaspoons dried)
- 1/4 teaspoon salt
- pepper to taste
- 1/4 cup feta cheese, crumbled
- fresh dill to garnish
Directions:
- Preheat oven to 425 degrees. Line baking pan with parchment paper.
- Peel carrots and slice ends off. Cut carrots on bias into 1-1/2" pieces. Place in large bowl.
- Add oil, honey, dill, salt and pepper. Toss until carrots are fully coated.
- Using slotted spoon, remove the carrots from the bowl and spread out on prepared sheet pan. Reserve liquid to baste.
- Roast 20-25 minutes until tender. During last 10 minutes brush carrots with reserved liquid.
- Transfer to serving platter and toss with feta. Garnish with honey and fresh dill.
