Honey Roasted Carrots


  • 1 pound carrots
  • 1 tablespoon honey
  • 1 tablespoon avocado oil
  • 1 tablespoon chopped fresh dill (1-1/2 teaspoons dried)
  • 1/4 teaspoon salt
  • pepper to taste
  • 1/4 cup feta cheese, crumbled
  • fresh dill to garnish
  1. Preheat oven to 425 degrees. Line baking pan with parchment paper.
  2. Peel carrots and slice ends off. Cut carrots on bias into 1-1/2" pieces. Place in large bowl.
  3. Add oil, honey, dill, salt and pepper. Toss until carrots are fully coated.
  4. Using slotted spoon, remove the carrots from the bowl and spread out on prepared sheet pan. Reserve liquid to baste.
  5. Roast 20-25 minutes until tender. During last 10 minutes brush carrots with reserved liquid.
  6. Transfer to serving platter and toss with feta. Garnish with honey and fresh dill.
