Sheet Pan Shrimp Fajitas

Ingredients:

  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • 1 pound shrimp, peeled and deveined
  • 1/2 sweet onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 2 tablespoons olive oil
  • 1/2 lime, juiced
  • Diced avocado
  • Tortilla shells


Directions:

  1. Preheat oven to 500 degrees.
  2. In small bowl, combine chili powder, garlic powder, paprika, cumin and salt.
  3. On sheet pan, toss shrimp, onion, peppers, oil and seasoning mixture until combined. Spread in single layer on pan. Bake 8 minutes, until shrimp are tender but firm and edges of vegetables are charred.
  4. Drizzle lime juice over shrimp and vegetables and serve immediately with avocado and tortilla shells.
