Pineapple Teriyaki Crockpot Chicken

This one is a new family favorite! And it's super easy. I cooked the chicken long enough to easily tear apart and serve as sandwiches. It tasted great served over corn muffins.

Ingredients:

  • 1 cup pineapple juice
  • 1/2 cup packed brown sugar
  • 1/3 cup soy sauce
  • 2 pounds boneless, skinless chicken breasts


Directions:

  1. Combine pineapple juice, brown sugar and soy sauce. 
  2. Place chicken in a crockpot and cover with juice mixture. 
  3. Cook on low for 6-8 hours.

Chicken and Waffle Sandwiches

Ingredients:

  • 4 slices cooked bacon, halved
  • 8 frozen whole-grain waffles, toasted
  • 6 ounces thinly sliced deli chicken breast
  • 8 slices ripe tomato
  • 4 lettuce leaves


Directions:

  1. Spread mayonnaise or butter on four waffles.
  2. Divide chicken, bacon, tomatoes and lettuce evenly among servings. 
  3. Top with remaining waffles.
  4. Serve with homemade strawberry milk shakes!

Serves 4.
