Baked Oatmeal

Ingredients:
  • 1-1/2 Cups Soy Milk
  • 2 Eggs, beaten
  • 2 Tablespoons melted butter
  • 1 Teaspoon vanilla
  • 1 Teaspoon cinnamon
  • 2-1/2 Cups Rolled Oats
  • 1/2 Cup Brown Sugar
  • 2 Teaspoons Baking Powder
  • 1/2 Cup Dried Cranberries
  • 40 Pecan Halves
Directions:

  1. Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray. 
  2. Whisk together liquid ingredients. 
  3. Stir dry ingredients together. 
  4. Fold liquid into dry and add cranberries. Let stand for 15 minutes. 
  5. Pour into 9x13 pan, top with pecans and bake 35-45 minutes.
4 Weight Watchers Points Plus per serving. Serves 12.
